History – The Mark Olympia was established in 2001, Lisa Scott Owen<\/a> opened what would become a landmark restaurant in Olympia, WA, The Mark. Her vision was to create an atmosphere of classic elegance and charm where her guests could experience the traditional excellence of the culinary styles in Tuscany and Lazio. Chef Lisa continues to travel to Italy regularly for research and is grateful to have an amazing network of Italian friends to aid her in this work.<\/p>\n

The Mark Olympia\u00a0 is well recognized for having the finest cocktails in Olympia with a sophisticated and extensive bar selection.<\/p>\n

In 2022 after being closed due to Covid Chef Lisa spent months apprenticing Pizza Making. After much research and further apprenticeships in Rome, The Mark re opened serving Roman style pizza “Pizza al Taglio”. Roman friends shared this Pizza as the best for enjoying community during and after the worst of the pandemic. This pizza style is lighter and healthier while still decadent and fun. A light but filling meal to enjoy with drinks in company at the restaurant or to take home while you simply enjoy life.<\/p>\n

The Mark is and has always been completely independent and locally owned.<\/p>\n

The Mark uses <\/span>organic, locally grown<\/a> ingredients as much as possible and is one of the oldest organic\/local foods restaurants in Washington State.\u00a0<\/span><\/p>\n

Maintaining the original character of the 1940’s modern historical building what was once a tire store, Lisa used recycled building materials and vintage fixtures when possible, creating an elegant retreat for the capital city. The Mark’s signature dark mahogany wood paneled walls and red velvet curtains create the lush atmosphere that provides a warm invitation to a relaxed yet refined dining experience. The large outdoor garden patio area lends itself to casual, warm summer evenings.<\/p>\n

Lisa’s grandfather<\/a> is an established sculptor a graduate of the New Bauhaus. His work and lifestyle had a strong effect on her as a designer. The love of art and her dedication to the art community is reflected in offering the restaurant as a non-commission gallery space.<\/p>\n

The name “The Mark” is in remembrance of Lisa’s stepfather Mark Lissner Greenberg<\/a> who passed after a long battle with cancer just a few years before the restaurant opened.\u00a0The experience of seeing the positive results\u00a0on Mark’s longevity and quality of life in the last years\u00a0from his having had a healthier, organic foods diet \u00a0had a huge effect on Lisa.<\/p>\n

In all aspects of its design The Mark celebrates the balance of health and decadence. The Mark has quietly been a modern healthfood restaurant for more than a decade. An Italian version of healthy that includes Roman style Pizza al Taglio, excellent clean cocktails and wine.<\/p>\n

The Mark has become the clear choice when a special event<\/a> needs to be planned. It has in essence become an extended part of the savvy Olympian\u2019s household or business.<\/p>\n","protected":false},"excerpt":{"rendered":"
